Panko breadcrumbs (パン粉) are a type of breadcrumb that was first developed in Japan. The name Panko originates from the Japanese term for breadcrumbs (パン粉), which is pronounced “panko,” and this name has since become internationally recognized for this product.
Unlike conventional breadcrumbs, Panko is produced without direct heat and is baked using an electric oven. This unique baking process prevents burning or crust formation on the bread. As a result, Panko breadcrumbs have a distinctive flaky, uniform structure. Achieving this specific texture requires the use of high-quality refined wheat flour, as lower-quality flour would make it impossible to obtain the characteristic flake-like crumb structure.
Additionally, the production process involves a single baking stage followed by rapid drying, which helps prevent the formation of acrylamide, a potentially carcinogenic substance that can develop during high-temperature baking.
